Spicy Mexican Pinwheels

These Mexican pinwheels are quick and easy to make. Delicious!

Spicy Mexican Pinwheels

8 oz. plant Kite Hill Chive Cream Cheese

½ cup Kite Hill Plain yogurt

1 tbsp of buffalo seasoning

1 can of Ro-tel drained well

1 cup scallions chopped fine

½ cup chopped fresh cilantro

5 gluten free tortillas

Allow the Kite Hill to sit out for 20 minutes to make it easier to work with. Combine all of the ingredients except the tortillas in a bowl. Divide the mixture evenly among the tortillas and spread it evenly across each one. Roll the tortillas up jelly roll style and slice into Pinwheels using a serrated knife.

Buffalo Spice Mix

2 tsp. chili powder

3 tsp. smoked paprika

2 ½ tsp. cayenne pepper

3 ½ tsp. garlic powder

3 tsp. mustard powder

4 tsp. onion powder

½ tsp. coarse kosher salt (optional)

1 tsp. black pepper

¼ tsp. gluten free xanthan gum

 

Combine all ingredients and store in an airtight container.

To make Buffalo Sauce

Combine 1 tbsp. of the spice mix with ½ cup of white vinegar.
